Marge’s recipe.

ingredients 

1/2 cup margarine
1/2 cup onion
2 pkgs chopped, thawed broccoli
1 can cream of chicken soup
8 oz jar cheese whiz
1-1/2 to 2 cups cooked rice
 

preparation

1. Melt margarine and add onion and broccoli
2. Cook for 20 minutes
3. Add cream of chicken soup and cheese whiz
4. Mix until well blended
5. Add cooked rice and bake 25-30 minutes at 350 degrees

Cheese Potato Casserole

ingredients 

1-2 lb frozen hash browns, thawed
1/4 cup chopped onion
1 cup sour cream
1 stick melted margarine
3/4 cup grated cheddar cheese
crushed corn flakes
 

preparation

1. Mix all ingredients except corn flakes.
2. Put in ungreased 9×13 pan.
3. Bake at 350 degrees for 30 min
4. Sprinkle crushed corn flakes and bake another 30 minutes

Creamy Baked Asparagus

Tossed with creamy dressing and covered with a crispy topping…this will put a new twist on asparagus.  Received this one from my sister-in-law, Tina, when they were down visiting our new arrival.  It’s quick, easy and quite tasty.

ingredients 

1 lb fresh asparagus spears, trimmed
1/4 cup Kraft Peppercorn Ranch Dressing
2 tablespoons shredded parmesean cheese
1/2 cup coarsely crushed Ritz cheese crackers (about 12 crackers)

preparation

1. Preheat overn to 350 degrees. 
2. Cook asparagus in simmering water in large skillet 2 to 3 min or until bright green, but still crisp.  Drain water
3. Toss asparagus with dressing in 1.5 to 2 quart baking dish.  Sprinkle with cheese and cracker crumbs.
4. Bake 10 to 15 minutes or until cheese is lightly browned and mixture is heat through

Corn Cake Casserole

Is there anything that corn cake doesn’t go good with?  We received this recipe from our friend Patti who included this as a side dish to a dinner she prepared for our monthly dinner get-togethers.  It’s quite delicious and you very well could make a dinner out of this all own it’s own…but that’s just my biased, corn-loving opinion.

ingredients 

1 can cream corn
1 can regular corn
1 stick butter
1 (8 oz.) sour cream
1 box Jiffy cornbread
Grated cheddar cheese 

preparation

1. Mix butter & sour cream
2. Pour 2 cans of corn in bowl
3. Add sour cream mix and cornbread mix
4. Pour into pan & bake 15 min @ 350 degrees.
5. Sprinkle cheese on top and bake additional 30 min.

Gourmet Chicken

Deanna & I received this recipe from my Mom at our wedding shower in 2006.   We have tried this dish a number of times and the water chestnuts definitely make this one addictive. 

ingredients 

3 cups chicken breast, chopped & precooked
1 package Uncle Ben’s Long Grain & Wild Rice Mix
1 cup mayonnaise
1 can celery soup
1 can water chestnuts, sliced
1 onion, chopped
1 can green beans, french style

preparation

1. Cook rice mix according to box.
2. Mix cooked chicken in with rice mix.
3. In separate bowl, combine soup & mayo & microwave for 30 seconds
4. Whisk well together & fold rice-chicken mixture into soup & mayo mix.
5. Add drained water chestnuts and fold in drained green beans
6. Bake at 350 degrees.

Reuben Casserole

Deanna & I received this recipe from Maryann at our wedding shower in 2006.   Maryann was my parent’s neighbor for years on the street where I grew up in Pittsburgh…she was always like a second mom to me.  (Another great ‘delicacy’ from her was ‘Sauce Sandwiches’…this doesn’t require a recipe, just good homemade red spaghetti sauce and two slices of white bread…shower with a little bit of mozzarella if you’d like.)

ingredients 

1 bag sauerkraut, rinsed
1 lb cornbeef, chopped
1 cup thousand island dressing
1 lb swiss cheese
12 slices rye bread, cubed
1 stick margarine

preparation

1. Rinse sauerkraut & add to 13×9 pan
2. Add chipped cornbeef on top of sauerkraut
3. Add thosand island dressing on top of cornbeef
4. Layer swiss cheese on top
5. In mixing bowl, add 12 slices of cube rye bread
6. Cover rye bread with 1 stick of melted margarine & toss.
7. Add bread mixture on top of 13×9 pan and bake uncovered at 350 degrees
