Joe’s Salsa

No fancy name here, Joe’s Salsa is adequately named for the gentleman who so graciously shared his fresh recipe for a salsa with some kick.  Joe is a good friend of my in-laws and i actually got me to meet him the first time I met Deanna’s parents…we always joked that he should bottle this and have his picture put on the jar.  Caution:  The recipe is simple…the bite is killer.

ingredients 

1 diced red onion
2 diced tomatoes
5 jalopenos
Cilantro (to taste)
Juice of 1/2 lime

preparation

Dice all ingredients together & server with tortilla chips

Texas Caviar

A very addictive tortilla companion that we typically make for gatherings.  Another great recipe from the kitchen of Tina.

ingredients 

1 can white corn, drained
1 can black peas, drained
3 tablespoons salsa
1 chopped tomato
1 chopped green or red pepper
1 chopped onion
Prepared Good Season’s Italian dressing packet (4 oz.)

preparation

1. Combine all ingredients
2. Serve with tortilla or pita chips
