Broccoli Ham Ring

ingredients 

4 oz chopped ham (in can) – 1 cup
1/4 lb broccoli, chopped – 1 cup
1/4 cup onion, chopped
1/4 cup fresh parsley, snipped
1-1/2 cup (6 oz) shredded swiss or cheddar cheese
2 Tbsp Dijon mustard
1 tsp lemon juice
2 - 8 oz packages of refiigerated crescent rolls
 

preparation

1. Preheat oven to 350 degrees
2. Combine chopped ham, broccoli and onion in a large bowl
3. Snip parsley and add it to the bowl along with the cheese, mustard and lemon juice. Mix well.
4. Unroll crescent dough and separate into 16 triangles.  Arrange triangles in a circle on 13″ baking stone with ends of triangles overlapping in the center and points towards the outside.  (There should be a 5 inch diameter opening in the center of the stone. 
5. Scoop ham mixture evenly onto widest end of each triangle.
6. Bring outside points of triangles up over filling and tuck under wider ends of dough at center of ring.  Note, filling will not be completely covered…that is ok)
7. Bake 25-30 minutes or until deep golden brown color

Approx 8 servings (330 calories and 20 grams fat)

Chicken Salad

This chicken salad makes a delicious luncheon salad served on lettuce leaves with sliced avocado, or fill tortilla wraps with the mixture..

ingredients 

2 cups diced chicken
1/3 to 1/2 cup mayonnaise
2 tablespoons sour cream
1 cup seedless green grapes, sliced
3 green onions, with some green, thinly sliced
1 rib celery, thinly sliced
1/2 cup walnut pieces
1/4 teaspoon salt
Dash pepper
1 tablespoon lemon juice
1 teaspoon honey, or to taste
Salad greens, optional
Shredded raddiccio, optional
Sliced avocado, optional
celery seed

preparation

1. Combine the diced chicken with 1/3 cup mayonnaise, sour cream, sliced grapes, sliced green onions, sliced celery, walnuts, salt, pepper, and lemon juice.
2. Stir in the honey and more mayonnaise, if needed.
3.Serve the chicken salad mixture on salad greens and raddiccio and garnish with sliced avocado.
** For sandwiches, line sandwich rolls with lettuce leaves and fill with chicken salad

Nutty Tuna Salad Pitas

Deanna & I received this recipe from my Aunt Betty at our wedding shower in 2006.   We have not tried this one yet, but it definitely sounds tasty.  

ingredients 

6 oz tuna, drained
3/4 cup feta cheese, crumbled
1/3 cup celery, thinly sliced
1/2 cup apples, diced
2 tbsp tarragon, chopped
Salt & pepper to taste
2 pita breads, halved
2 cups mixed greens

preparation

1. In a medium mixing bowl, combine tuna, feta cheese, celery, apples, nuts and tarragon; mix well.
2. Stir in salt and pepper.
3. Line each pita bread pocket with 1/2 cup leaf lettuce, fill with 1/4 cup tuna mixture.
